Baked Stuffed Brie with Cranberries & Walnuts
Chef John's version of baked brie is wrapped in puff pastry dough, chilled, and then baked until the pastry is perfectly browned and the brie is warm and melty.
Turned out great ! Everyone loved it. I used roasted walnuts.
I made for a dinner party and I was hit! I put it together and put in the freezer for a while., lowered the temp to 400 and added 5-10 min. I also used a cookie cutter to make a Christmas tree for the top. Very pleased with how it turned out.

This is soooooo delicious! I followed the preparation directions exactly. Then I forgot to put it in the oven when my guests arrived. I left it in the fridge for a week and then baked it. I didn't know if the pastry dough would still be good. I had not put the egg wash on yet. No harm, no foul! This is amazing, and clearly it is fine as a make-ahead dish.
DO. NOT. Change a SINGLE INGREDIENT! :) Trust the process. :) It's SO much easier than you can imagine. Follow it EXACTLY, including freezing it for one hour! This went so fast at our recent gathering that I wish I had made two of them. :) Chef John NEVER disappoints. I have gotten to the point that if I find a recipe of his, it's an automatic yes with no substitutions. :) I will say that if you don't have time to create the fun grapes on top, an easy fix is to use a cookie cutter of your choice. We used a fall leaf and layered two on the top. You will be the hit of the party with this stunner of a recipe. I promise!
Made this for a Christmas party. It was a huge hit! Didn't change a thing. Turned out beautiful. I should have taken a picture. Making it again tonight for New Year's. This time, added a 1/4 cup fig preserves. I'll report back with a picture this time.
