This is a great recipe for sweet potato casserole. I found that 1/4 cup of sugar in the potato mixture is enough for my family's sweet tooth since the topping adds more sweetness. A secret for those who do not like "stringy" sweet potatoes...use a mixer to combine the sweet potatoes and other ingredients. All the strings from the sweet potatoes wrap around the beaters, so don't scrape them after mixing.

This is simply delicious!! I've made it MANY times when invited out for dinner, and every time I am asked for the recipe. I make it exactly as directed and it always turns out wonderfully. One thing that I do add, which is always a crowd pleaser, is a pecan-sweet potato flower or two on the top. I save about 2 tablespoons of the bright orange mashed sweet potato (before you add all the goodness) and put it to one side. Once the casserole is made and is in the baking dish, I top the crumble with the dollop of sweet potato formed into a circle, like the center of a flower. Then I use pean halves to form the flower petals that I place around the circle. I usually make two of these flowers and people just LOVE them. It's funny. Watch your guests... no one wants to be the one to ruin the pretty flower, so it's often the last piece to be scooped out. :-)

I am not a sweet potato fan, so I've avoided fixing them for years. When I saw this recipe I decided to give it a try. According to the sweet potato lovers in my family, it is an absolute must from now on. I have now made it twice, once with Splenda white and brown sugars (for a diabetic) and once with regular sugars. Also, I didn't have any heavy cream so I used egg nog....WOW! For once we didn't have left overs to beg people to take home, they were asking for the leftovers!

Very good. I would suggest trying your best to get potatoes that are medium size not too large(not very sweet) or too small( overly sweet). I processed my potatoes in the processor after baking( I hate strings). I put my pecans in the food processor making them very fine before mixing with the sugar topping, I also added an extra 1/4 cup of finely processed pecans to the sweet potatoes. I also sprinkled a few marshmellows on top. My guests went back for seconds and thirds. I was told that it was better than Boston Markets sweet potatoe cassarole!

My & half of my guests do not even like sweet potatoes but each & everyone of us loved this casserole. Out of 5 side dishes, this was the 1st one to be eaten up! Kids & adults will love this! I tried baking htem, but they were still really hard so I peeled them up, placed them in boiling water(like I do when making regular mashed potatoes) until they were really soft (maybe 15 minutes), drain them & they were so easy to mash up after that.
